Les marchés de CASTRES

Where greed is not a sin

Castres is right in the heart of a region with a wealth of culinary traditions, where "eating well" and "healthy eating" are "de rigueur". Local specialities have pride of place from one end of the meal to the other, as does the local Castres beer with a slightly lemony taste...

For starters, of course, there's a whole range of "charcuterie" (cooked meats) with unique products such as "melsat" or "bougnette". For the main course, as well as game, duck and "cassoulet" (haricot beans, pork and duck), pork also features on the menu with "fresinat" (fresh cuts of loin and neck cooked with potatoes).

All these dishes may be served with mushrooms from our forests, freshly-picked or dried, which lend even more flavour when cooked in sauces. For dessert, the poumpet (lemon-flavoured cake made with puff pastry) remains an all-time favorite...

So give in to temptation and enjoy our gastronomy - taste our top-quality gourmet produce !
